Classic risotto with sautéed mushrooms and basil pesto
Risotto made the old-school way. Caramelize onions in olive oil, add the risotto and toast slightly, deglaze with white wine, and slowly add stock. Boom. Finally, the basil pesto and sautéed mushrooms are added.
